This recipe for Chocolate Fudge Glaze is super simple, quick and easy to throw together in the microwave or on the hob.
Adding in a pinch of salt and a touch of vanilla to anything chocolate deepens the flavour profile, you can leave it out, but I don’t recommend…
Salt and chocolate are like Fred and Ginger, a natural and magical pairing. Every chocolate recipe is enhanced by a pinch of salt. If it’s not in the ingredient list add it in!
Vanilla brings comforting floral note tastes as well as playing tricks on the tongue to make everything else feel sweeter
I don’t list it, but you could also add a touch of chili (as I suggest over in my hot choc recipe) for another great variation, especially if you are also adding cherry flavours to whatever else you are pouring this over!
Ingredients
- 1 Tbsp unsalted butter
- 125ml (1/2 metric cup) Double cream
- Sweetener of choice to taste; I recommend starting with 2 tsp Pure Via (erythritol stevia mix), or 12 NKD stevia drops, then adjust to your liking if you need a bit more
- Pinch of salt, to taste (NB: If you’ve only got/used salter butter, omit this! It would then become be way too salty.)
- 1/4 -1/2 tsp vanilla extract (to taste)
- 50g 100% Dark chocolate of your choice; I personally would use Montezuma’s Absolute 100% Black, either just over half a bar chopped up or in small button form
Method
Melt the butter into the cream together either in a bowl in the microwave or in a saucepan on the stove.
It should take around a minute or two at most. The cream need to be warm enough to then melt the chocolate, and so doesn’t need to boil (which will make it form an unpleasant skin)
As soon as you see it is starting to simmer stop heating.
Then, whisk the sweetener, salt and vanilla into the warmed cream mixture and then add in the chocolate a little at a time
Allow to melt and whisk it together until fully incorporated. You may need to add a little more heat, depending how cold your room and the chocolate are!
Be patient, it will come together into a smooth fudgy “not-quite-liquid” yet pourable consistency
Use immediately or pour into a jar or airtight container and place in the refrigerator to keep for later.
This sauce will naturally harden during storage in the refrigerator.
Remove your Chocolate Fudge Glaze few hours before use, or pop in the microwave for a 10 seconds or so until it melts again. Stir together to smooth out the consistency.
Or, you could simply eat it with a spoon on its own direct from the fridge! 😉
