16th September is National Guacamole Day!

Now, I love avocados straight out the skin with a teaspoon, or chopped up 70’s style with some prawn cocktail and shredded lettuce, but there is something about guacamole that really hits the spot.

Originally created by the Aztecs 500 years ago or so, Ahuacamolli was made by mashing peeled, ripe avocados and salt together in a large mortar and pestle.
(compounded Nahuatl word = word for avocado, āhuacatl, and for sauce, mōlli )

Modern guacamole recipes originate in the late 20th century and usually call for lime juice, coriander, onions and jalapeños, with other additions such as sour cream, tomatoes, basil or even peas!

I like it with chopped tomato, onion and a hint of garlic, so here’s my recipe:

Ingredients

  • 1 medium ripe avocado, peeled, seeded and smashed
  • 1tbsp lime juice
  • 1 small tomato, seeded and finely chopped
  • 1 small finely chopped red onion
  • 1 garlic clove, minced
  • pinch of salt

Method

Mix everything together, let stand for an hour or so to let everything get to know each other.
