All hail Tom Noughton’s “older brother’s oldest son” for creating this recipe – FatHead dough, made famous by the the movie, FatHead!, is the closest thing I’ve tasted to a thin crust wheat dough pizza or a wheat cracker without it being a wheat flour based dough!

The “classic” use (how it came to the world and the picture I chose) is as a pizza dough recipe, yet the dough itself is endlessly versatile and as such has taken the low carb world by storm!

Ingredients

  • 150g grated hard mozzarella
  • 30g cream cheese
  • 115g sifted ground almonds
  • 1 egg, beaten

Method

Place the mozzarella and cream cheese in a medium size microwaveable bowl.

Microwave for 1 minute, stir about to incorporate the cream cheese into the mozzarella and then cook for another 30 seconds.

Stir/fold in the ground almond and beaten egg with a spatula. It will resist mixing initially, but does come together after a few minutes.

Let the dough cool slightly, then knead until smooth. Add a little extra almond if the dough is too sticky, then knead again.

Use the dough as you wish! It’s best manipulated into the recipe you want to make whilst warm, as it sets rock hard when cool.

It doesn’t roll out, so it is best to smush it flat by hand between two sheets of parchment paper or non-stick liner (I use a silicon baking mat to smush it onto, and the whole thing then goes onto a cookie sheet and into the oven)
